Cheese Buying and Serving Tips

When buying cheese it’s best not to buy big hunks unless you plan on serving it frequently, but if you do, know how to wrap and store it properly.  

First, cut off only as much cheese as you’re going to use and wrap up the larger portion.  Refrain from bringing the larger piece to room temperature.  When wrapping, strive to keep the cheese covered and moist, yet able to breathe.  Too much air will cause it to crack and dry.  

Use foil, waxed paper or plastic wrap.  After unwrapping, re-wrap with fresh wrapping.  Re-using the old won’t seal properly.  

Serve cheese at room temperature in the wrapper until ready to serve.  Present it on a wooden cutting board, marble, tile or plate.   Have separate knives for each cheese.  Add a crusty bread and a compatible wine, some fruit and a scattering of nuts and you have the beginnings of a great party!
